Dietitian's Tip: Would you have guessed that a whole yellow or red pepper has 4-5 times more vitamin C than an orange?
  • 2 cups (500 mL) halved grape tomatoes
  • ½ sweet pepper, diced
  • ½ shallot, slivered
  • 1 garlic clove, minced
  • 2 tbsp (30 mL) minced chives or parsley
  • 2 tbsp (30 mL) lemon juice
  • 2 tbsp (30 mL) olive oil
  • 1 tbsp (15 mL) liquid honey
  • salt and pepper to taste
  1. In a small bowl, mix halved grape tomatoes, sweet pepper, shallot, garlic clove and minced chives or parsley.
  2. Add lemon juice, olive oil and liquid honey.
  3. Season with salt and pepper; stir gently to combine.
Will keep for 5-7 days in the refrigerator.
